It has come to the management’s attention that a certain party needs a little more support in preparing dinner for the family on weeknights. With that in mind I have created the following menu of meals along with a well-stocked larder.
Spaghetti with Ricotta & Roasted Tomatoes from new Real Simple cookbook. Tomatoes already roasted and in refrigerator.
Lamb Sausage with Lima Bean Salad also from RS cookbook with alteration; serve with Roast Potatoes with Lemon, prepared and in refrigerator.
Bean Burritos and Mixed Greens Salad. Dressing and salsa prepared and in refrigerator.

Take chicken out of plastic & let it dry out in fridge uncovered for about an hour. When you’re ready preheat to 400 degrees. Drizzle bird in olive oil & dust with that spice mix I made. Stuff w: garlic & 1/2 lemon. Roast in the cast iron pot uncovered about 70 minutes.
